Chappy Says...

The title of my cookbook is “Looks Good to Me!” The reason for the title is simple - food has to look good to taste good.

• So my very first suggestion in the way of cooking tips is to always consider the presentation. Make the food you prepare look good.
   
• My second suggestion is to be aware when you are cooking. It is very important to know when a dish is not right. Pay attention to see if the dish is too dry, too salty, too runny, too much sauce, etc. You must look, taste, and smell. Become a sort of cooking detective.
   
• The third suggestion is a bit of advice my mother told me when I first opened the Restaurant: never serve food that you wouldn’t eat yourself. Just throw it out or give it to the dog and learn from your mistake.
   
• For suggestion four, I say substitute and experiment. Don’t be afraid of a recipe. I alaways enjoy preparing a dish a little differently.
   
• My fifth suggestion encompases my philosophy of life: have fun. Your food will taste a lot better.
